These giant Reese’s Pieces Peanut Butter Cookies are the most comforting and delicious dessert I have ever made. They are filled with not only Reese’s Pieces, but also white chocolate peanut butter cups and peanut butter chips. It is a decadent and rich peanut butter explosion. 

Just when you thought there wasn’t enough peanut butter… 

… BAM! There’s more. 

After mixing together all the goodies, these cookies are covered in more Reese’s Pieces before baking, giving you non-stop peanut butter richness in every bite. 

The Process 

Prepare your work station:

Ingredients for Reese’s Pieces Peanut Butter Cookies

Prepare the cold butter by cutting it into cubes and prepare the eggs by whisking them together. Place back in the fridge while you measure out the other ingredients and grab the necessary tools for these cookies:

  • Electric Mixer and Bowl 
  • Scale 
  • Ingredients, measured out into separate bowls
  • Pans lined with parchment paper 

Mix together the cookie dough:

Begin with the “wet” ingredients: 
  • In a large bowl fit to an electric mixer and paddle attachment, beat on high the cold butter until creamy (3 minutes). Set a timer and walk away until the butter is nice and creamy. 
  • Add in the sugars and cream together on medium-high for another 3-4 minutes.
  • Add in the eggs and beat together on medium speed until well combined. 
Next, add in the dry ingredients & goodies: 
  • In a separate medium bowl, whisk together the flour, baking soda, salt and optional cinnamon.
  • Gradually add the dry ingredients to your butter, egg and sugar mixture. Being sure to scrape down the sides of the bowl as necessary. Don’t over mix! Stop when everything is JUST combined
  • Add in the 150g of Reese’s Pieces, peanut butter chips, and roughly chopped mini Reeses Cups and incorporate into the dough. 
  • Cover the dough with plastic wrap and place in the fridge for 2-3 hours

Measure out the cookie dough balls, dip and bake:

  • With about 45 mins left, preheat your oven to 410 degrees.
  • Remove the dough from the fridge and separate into 8 equal dough balls (using a scale to measure).
  • Shape your dough into balls that are taller than they are wide – this helps with rising in the oven as they bake. 
  • Dip the cookie dough balls into a small bowl of Reese’s Pieces covering the tops of the cookie dough balls. You may need to use your hand to press the pieces into the cookie dough to stay. 
  • Place dough balls onto baking trays lined with parchment paper. You should fit 4 each on a sheet.
  • Bake for 15 – 18 mins or until the tops begin to golden. 
  • Remove from the oven and let them sit on the trays for 5 minutes and continue baking just a bit.
  • Cool on a rack fully and enjoy!

Do I have to refrigerate my cookie dough before baking?

Yes! Don’t skip this step. You want to make sure the butter and all the other ingredients are nice and chilly before hitting the hot oven. If you skip this step, the cookies won’t hold their shape when baked. So make sure you keep things nice and chilly! 

Do I need an electric mixer for this recipe? 

Yes! Either a hand held or standing mixer is needed for this recipe both because the butter needs to be properly whipped and because this is a THICK cookie dough that needs a little extra “oomph” to fully mix together. 

How long do the Reese’s Pieces Peanut Butter Cookies last in the fridge?

These cookies will last 4-5 days in an airtight container in the fridge. I love to take a bit of the cookie, microwave it for about 30 seconds and then pair it with some vanilla ice cream. Absolutely delicious all week long.

Scale
  • 227g cold butter
  • 2 cold eggs
  • 190g brown sugar
  • 110g sugar
  • 475g all-purpose flour 
  • 1 tsp cornstarch
  • 3/4 tsp baking soda
  • ½ tsp Kosher salt
  • 2 tsp cinnamon (optional) 
  • 300g white chocolate Reese’s cups, roughly chopped (minis unwrapped)
  • 150g Reese’s Pieces, plus 50g more for dipping
  • 100g peanut butter chips
