This Pistachio and Cranberry Bark is for all my friends out there who maybe aren’t fans of peppermint, but still want a wonderfully festive and flavorful chocolate bark to enjoy through the holiday season.
Pistachio is one of my favorite flavors to eat, but I haven’t baked with it much up until recently. What I have found is that de-shelling them can be a bit of a pain, but the delicious salty nutty flavor that comes after is always worth the time spent.
And you know what pairs amazingly with that? White chocolate and cranberry. Salty, sweet, fruity perfection. That is what you’ll find with every bite of this simple no-bake holiday candy.
The Process
Prepare the Pistachio and Cranberry Bark ingredients:
Lightly spray a 9×13” sheet pan and line it with parchment paper. Measure both chocolates in two separate microwave safe bowls.
Roughly chop the pistachios and cranberries and set those aside.
In the microwave melt the white chocolate morsels in 30 second intervals, stirring between each until smooth.
Then, melt the dark chocolate in 30 second intervals, stirring between each until smooth.
Combine the white chocolate layer ingredients:
Mix the pistachios and cranberries into the melted white chocolate.
Spread the white chocolate pistachio and cranberry mix onto the parchment lined pan. You may need to hold down one side of the parchment paper while spreading the chocolate as it tends to slide!
Feather the chocolate:
Then, drizzle the dark chocolate on top with lines all going in a horizontal direction.
Next, grab a toothpick or other pointed object, and drag it in a vertical pattern up and down the horizontal lines. Creating a feathering effect.
Freeze, Set, Chop and Devour:
Place the candy back in the freezer until set. Then, carefully cut into squares with a sharp knife.

Storing the pistachio and cranberry bark is oh so simple and will last you all season long! Simply place the bark in a freezer safe bag or airtight container and put it in the freezer to last up to 3 weeks!
Enjoy piece by piece straight out of the freezer or pull them out and plate them to serve immediately with your guests. Just make sure to keep it cold otherwise the chocolate will begin to melt!
