Did you know you could make cookies out of cake mix? 

Up until a few weeks ago, I had never tried this out myself. But it is so simple and so perfect if you are…

  1. New to the baking world and want to keep things to the basics
  2. Short on time
  3. Short on ingredients 
  4. Or just want a simple bake that yields delicious cookies

I somehow seem to have either a cake mix or a brownie box mix in my pantry at all times. Normally the cake mix is from Trader Joe’s because they always have such fun and seasonal flavors, but you can use this baking hack with any cake mix you find in the grocery store.

Just be sure to check out my tips below as well as fun flavor additions you can add to the mix to make these cookies your own!

The Process 

For the recipe pictured, I used two box mixes from Trader Joe’s. Their Lemon Cake Mix & their Blood Orange Cake Mix. 

Preheat the oven to 375ºF and gather your ingredients Mix together the cake mix, eggs & vegetable oil in a large bowl.

  • If you notice the consistency is a little too “wet”, throw in a spoonful or two of all-purpose flour. 
  • If you notice the dough is too stiff, then add a bit more vegetable oil or water 

Throw in whatever “extras” you would like. For this recipe I decided to combine the cake mixes. I scooped out around 15 cookies from each batch of mix, then cut each cookie dough ball in half. Then I squished two halves from each batch together to make a ½ Lemon ½ Orange Cookie!  For a few of the cookies, I then topped them with white chocolate chips! 

Place all the cookies on a lined baking sheet and bake for 10-12 minutes or until the cookies are set! 

TIP: If you are using a new box mix, watch the cookies carefully. I have found that some bake faster than others so stay close by! 

Remove from the oven and allow the cookies to cool on the pan for a few minutes before moving to a cooling rack.

The final touch I put on these cookies was to use the glaze pouches that was provided in the box mix. I followed the instructions on the box and then topped each cookie with a little dash of glaze magic! 

The Tips 

What if my cake box package is more or less than 15oz?

No problem! Still follow the recipe below, but be prepared to add more all-purpose flour if your package is less than 15 oz or add in more oil/water if your package is more than 15 oz

What kinds of customizations could I add to the cake mix?

The possibilities are endless! Think about the flavor already presented in the cake mix and ask yourself (or Google) what flavors complement it? A few ideas are below…

  • A dash of vanilla extract 
  • Peppermint extract 
  • Almond extract
  • Semi-sweet chocolate chips 
  • White chocolate chips
  • Peanut butter chips 
  • Walnuts 
  • Sprinkles 
  • Zest and/or juice from a lemon or orange (if baking with a fruity cake mix) 

How long do the cake mix cookies last in the fridge?

Wrap the cookies in an airtight container and they will last for at least one week in the fridge. You can also add a slice of bread to the container and keep the cookies on the counter. The cookies will suck the moisture from the bread, keeping the cookies fresher for longer.

    • Semi-sweet chocolate chips
    • Walnuts
    • Sprinkles
    • Zest from a lemon or orange (if baking with a fruity cake mix)
  • Scoop the cookies onto a lined cookie sheet and bake for 10-12 minutes or until the cookies are set!
    • TIP: If you are using a new box mix, watch the cookies carefully. I have found that some bake faster than others so stay close by!
  • Remove from the oven and allow the cookies to cool on the pan for a few minutes before moving to a cooling rack to enjoy!
